Lo que debes saber sobre Estandarización

Para empezar debemos saber que la palabra estandarización, viene de estándar, según la Real Academia Española, significa: Que sirve como tipo, modelo, norma, patrón o referencia, esta es la base para tener o llevar un control en la planificación de los procesos y recetas de nuestros productos.

Al diseñar un nuevo producto no solo debemos pensar en la creatividad del chef, no porque sea menos importante, sino porque hay otros factores que tenemos que tener en cuenta desde el inicio, los procesos, métodos, optimización, y cantidades en los ingredientes utilizados, son importantes para el control de su operación, tanto en la planta de producción como en las áreas relacionadas con almacén, costos, compras, etc. que aseguran la rentabilidad de un producto.

Para que sirve la estandarización de recetas y procesos

Le da uniformidad a nuestros productos y nos permiten fijar cantidades, tiempos de entrega y finalización de procesos. Con esto ahorramos tiempo y podemos identificar si hay un retraso en cada etapa de la producción. También ahorramos en las compras, ya que conocemos exactamente las cantidades necesarias de nuestros ingredientes, y al conocer la porciones y gramajes exactos optimizamos los recursos.

No solo se trata de tener una receta de la forma tradicional, de la que puedes obtener en una libro, es hacer cálculos, comparar porcentajes, analizar e identificar distintas formas de producción, ingredientes y métodos de elaboración para cada tipo de producto. Con esta información se determina, tamaños, pesos, y se realizan las  fórmulas finales para la elaboración y procedimiento de cada uno.
